I typically like dinner to be two things: easy and delicious. So when I set out to make dinner – or even better, freezer meals that I can pull out at the last minute – I want to infuse lots of good flavor into my recipes, but keep it simple.

This Parmesan Meatballs with Garlic recipe is a great protein that you can make for now or freeze for later. It is a delicious weeknight meal that will fit right into your meal planning or can even be a fantastic appetizer for a dinner party.

I make these garlic parmesan meatballs with breadcrumbs, but if you want to keep them carb or gluten-free, keto, or paleo-friendly, you can use pork rinds for the same crunch. Your choice!

How To Make:

Ingredients:
1 lb ground beef
1 egg, large
1/2 cup parmesan cheese, fresh and grated
1/2 cup breadcrumbs or crushed pork rinds (for keto/gluten-free)
3-4 cloves garlic, crushed
1 tsp Italian seasoning
1 tsp ground black pepper
1 tsp salt

Directions:

Preheat your oven to 400 degrees. Choose whether you'd like to use bread crumbs or pork rinds. If you are going with the pork rinds, seal them in a Ziploc baggie and crush them to bits with a rolling pin.

Rolled Parmesan Meatball in a handIn a large mixing bowl, combine your ground beef, parmesan cheese, breadcrumbs or pork rinds, garlic, Italian seasoning, salt, and pepper together. Work the meatball ingredients together with your hands until the meatball mixture is well combined in the large bowl.

Rolled Parmesan Meatballs on a baking sheetPinch off a ping pong-sized ball and work it with your hands into a round meatball shape. Place the raw meatballs on a rimmed baking sheet lined with parchment paper or a baking mat, allowing an inch between each one for a more even cook.

If you want to add another layer of flavor to your juicy meatballs, brown them in a large skillet over medium-high heat before baking, but you can absolutely skip this step if you're low on time. They're delicious either way!
